Well, they both lost a loved one who they were very close too, both are incredably stubborn so learning any life lessons (or anything in general) is a chore for them and being stubborn they have a hard time letting go of stuff like defeats and tragedy. Being in the wild and fighting for survival constantly probably doesn't help. Jude's desire for revenge/obsesión with power and Hilde's desperation to resurrect her master plus the ambiguous to criminal acts she has committed to do this, which weigh on her conscience (ergo the nightmares), probably left them quite bitter. But at least they recognized their problems and (at least started to) change for the better.
